Grilled foods are a staple for a warm summer night. Not all foods are grilled the same way though, and this is especially true for vegetables. Before you try throwing a vegetable medley on the grill, there are some varieties you’ll definitely want to avoid. These can include cucumber, celery, and most leafy greens because they hold such a high water content. Other than that, you’re good to go with whatever vegetable you choose. 

Some vegetables are pretty straightforward when it comes to grilling. Things like mushrooms or peppers need essentially no prep work done beforehand to prepare them for grilling (aside from washing). These are the ones you can just put on the grill as is and they take very little turning while cooking. 

Vegetables that take a little bit more prep and attention would be fennel and artichokes. These require you to do some prep work before you cook them, but they’re definitely worth it!
