Food waste is a big deal in the States. We may have crazy income inequality but 99% of the 99% act like they’ve got money to burn when tossing out food, myself included. Instead of seeing that stodgy leftover oatmeal and thinking “Gross – That there’s a bin job” take a moment to imagine what it could be. Imagine crisp oatmeal pancakes with yogurt and honey and berries. I’m going to have to start eating oatmeal just so I can have extra.
Everything on this list looks amazing and a lot of it, like the oatmeal pancakes, is simple to prepare. For instance, that pasta and cheese frittata looks better than the original pasta dish probably was. I think I’d throw some slices of tomato on top and fresh spinach, and how about some alfredo sauce? Hella yum.
